Scalloped Potatoes - The Simple Veganista
(Suggestion: Add 1/4 or 1/3 more almond milk or water. The top layer dried out quite a bit more than I would like. My partner had a great idea to forget about slicing the potatoes and letting them dry all day. You could just buy a few boxes of dehydrated scalloped potatoes and use those with the homemade sauce which was the best part. Think 2 boxes would be about right for the amount of sauce we made)

(Suggestion: Make extra dressing because you'll want to make it again and its kind of time consuming. If you don't soak the cashews overnight use hot water to speed up the process)

(Suggestion: If you have a tofu press it makes cooking out the remaining moisture a lot easier but they also suggest a heavy item to press out the water if you don't have a tofu press. Checkout the products page and order some of the tofu scramble seasoning)
